Pioneer Bread (Cowboy Cuisine)

Pioneer Bread
2 1/2 cups to 3 cups all purpose flour
1 package active dry yeast
1/ 1/4 cups water
1 tablespoon of sugar
1 teaspoon of salt

In large mixing bowl mix 1 cup flour and the yeast (wood bowl is best).

In sauce pan heat water, sugar and 3/4 teaspoon salt just till warm, 115 degrees (Gauge: if it feels too hot to your finger, it is too hot), stirring to dissolve sugar, salt and dry mixture.

Mix with wood spoon, if available, until all contents turn into an almost a ball and scraping the side of the bowl often.

By hand, stir in enough remaining flour to make a soft dough. You may need to add just a touch more flower to get it to shape into a ball, and place in a lightly greased bowl (stick butter rubbed around the inside of the bowl works good), turn once (literally, spin it over the top of itself once), cover, and let rise, out of drafts - till double. Cover with a towel to keep the draft off. Take your fist after about 40 minutes and punch down, cover again and let rest 10 minutes. Grease 1 quart casserole or use one of those clay baking platters without any grease. Bake at 400 degrees for 40 to 45 minutes.

Cover loosely with foil if top browns to quickly.

After about 40-45 minutes, remove and let cool. Cuts best once it has cooled just a bit.

Makes 1 loaf.
