Fatboy hash browns

This is a fat guy's take on waffle house hash browns:
(warning for the health conscious- this recipe has nothing to do with healthy. If you want healthy, don't take advice from a guy named fatboy :D )

Ingredients
1 package bacon- style is your choice
1 1/2 onions- mix of diced and chopped
1 package of hash browns- I like the cube style but again your choice
1 stick of butter
1 or more bags of cheese- flavor and exact amount up to you


Directions
Medium high heat on the stove and a big ass frying pan, turning the heat down as things cook.
Cut up the bacon into small slices the throw in a pan and cook it up
when the bacon is done, remove from the pan and let drain. Keep the grease, that's what you'll brown the hash browns in.
While the hash browns are cooking, cut up the onion- I use a mix of big chunks and little chunks. After the onion is cut, throw it into the pan with the hashbrowns. Add some butter. Stir all of it around.
Keep stirring, add some more butter as the bottom of the pan looks dry.
once the hash browns are browned up and the onions are more or less sauteed, turn off the stove and add in the cheese. I add as much as possible while still in the pan, then stir it some so it's nice and cheesy. Add the bacon back in, and transfer everything to a serving platter of some sort and then add some cheese on top.
Serves around 4, depending on how hungry you are.

I made a promise many years ago after graduating Ranger school that I wouldn't miss meals or be hungry again. So far I've more or less kept to that promise with few exceptions- war comes to mind.
Having said that, I'm not scared of some chest pains- I've got to die form something, it might as well be face down in a plate full of greasy, cheesy bacon filled goodness! :lol:
