Apparently, in my state there are races on public roads where you can go full throttle, known as The Silver State Classic.

They run it twice a year, the fall race is the Silver State classic, the spring race is called a different name. Same people. They also run one in Mexico.
I will run that race eventually...
Do a search for "Big Red" it was a '69 Camaro that ran it balls out and won a time or two. Good video from inside the car at 180+ IIRC.

They have different classes. You can enter to run as slow as 90 mph I think.
They are pretty strict as far as speed rules, etc..
You can't just show up and race at 180 mph.
You have to run a slower class to begin with, then progress up, unless you can prove you have adequate driving experience to handle the higher classes. i.e. Current Nascar, IROC, CART, etc.
I was gearing up to go do that race once...and life came along. '72 Camaro, 454, 6 speed, 200+ mph, I took it to 175+ in 5th gear a couple of times.
How about another chance?
78 Z/28, 505 cubic inches, 600+HP :)
It'll do 200+ if I geared it right.
It get's to be a hairy ride at 150+ in these old cars unless you do some extensive suspension, brake, and aerodynamic work.

You usually need a navigator, and you also want to go out and recon the course.
If you get a speeding ticket on the route within 90 days before the race, you are disqual'd. So no practice runs.
You want to know the exact distance, road moarker to road marker, and be able to time yourself to make the finish at exactly or as close to your time but NOT faster.
So you start from a standing start, and want to accelerate quickly, then stay at or a little ahead of your time, then the last couple of miles make adjustments to come in perfectly on time.
Some of the areas are winding, so you have to make up time in some spots.
You are limited. If you enter the 90 mph, you cannot exceed a certain max limit, like 115 mph. So no balls out driving unless you are in open class.

It'll be done in a week and a half.
I just got it Monday a week and a half ago. I've installed the motor, trans, and got almost all the little stuff worked out.
It will be about ready for paint beginning of next week.
It is setup to be more of a street/strip "sleeper". Stock appearing on the outside, fairly mild sounding, yet be pretty wild on the throttle.
Expect mid 10's in the 1/4 mile at ~125 mph.
